See the folk tale Brier Rabbit for details. I can't make head or tale out of the story when I read it because of the southern dialect (I'm East Coast-West Coast yuppie-Yankee hybrid. I take my pastrami with Walla Walla onions), but I don't think it's main intention was racism. Still, it's a remarkably stupid thing to say to an audience that isn't 100% southern.
