According to the episode, it's a sweet and tangy sauce. "A tiny bit of broth...a tiny bit of vinegar...and then, a tiny bit o wine - I love wine! - and also I luff ginger and garlic! 'Cause it give a nice and wonderful taste to it! And of course, sugar. Ahaaa..sweet and tangy, right? And then some sweet chili paste. Put it right here, very nice. Mmmmm. Really nice." Also he added a bit more ginger near the end.
