A sliderule would be good for a "back of the envelope" calculation. To be accurate I think you would want to find the average weight of cows selected at random and subtract the weight of unusable material (organs, bones etc.) and using matlab determine the ratio of cow density per cubic meter to the density of concrete per cubic meter. Once you have the ratio you could code a handy dandy input output calculator in C so you only need to know the volume of the building.
