It's "I like a good talking if you know what I mean." If you watch the movie and pay attention to the context from which it is presented you will understand why. I like to do the talking, if you know what I mean would not make sense, because he is making a trade with Kevin Costner's character. He is trading his "pppppaaaaper" for the women. Kevin Costner agrees to exchange 30 minutes with the adult woman for the 2 pages of paper, then the trader asks for an additional 45 minutes with the wee one.
The boat in this scene is Kevin Costner's, he is trading with the other guy from across his ship. Both Nola (the girl) and Jeanne Tripplehorn are essentially leeches, sponging off of Kevin Costner's generosity (even though Jeanne saved him from death earlier in the movie). Essentially both women "belong" to Kevin Costner, and he is trading slave sex labor for the paper. It is already implied that the trader would do the talking during the 45 minutes with the wee one, because he would be her owner for 45mins
I think it's "I like to do the talking..." because he knows the older woman would have a bunch of vile things to say about him, whereas the little girl would be petrified. Also the script says "like to do". The way the guy sounds I'd say it's more like "like ta do", so maybe the ta just sounds like good to ya.
